Som Tam
Serves 4
2 green papayas, shredded
1 tomato, thinly sliced
3 garlic cloves, minced
3-5 red fresh chillies, finely chopped
100 grams / ½ cup dried shrimp, pureed in blender
2 tablespoons sugar
2 tablespoons nam pla
1 tablespoon tamarind dissolved 3 tablespoons hot water
juice of 3 limes

Squeeze the juice from tamarind that has been soaked in water.
In a bowl mix all ingredients except lettuce until well blended.
Spoon the papyaya salad on a serving platter. Arrange lettuce on one side of the platter.
To serve, spoon payaya salad on a lettuce leaf and wrap it taco style.
Eat with fingers.
Note
If green papaya is not available, substitute white cabbage.
Also, if tamarind cannot be found, use juice of an extra lime.
