Pla Rad Prik

Deep-fried Fish with Chili Sauce

Pla Rad Prik 2Serves 4

657 grams / 1½ lbs whole fish, cleaned and scaled
3 tablespoons flour
75 grams / ⅓ cup vegetable oil four
2 tablespoons shallots, finely chopped
3 garlic cloves, minced
1 tablespoon Chinese parsley roots and stems, chopped
7-10 red fresh chillies, seeded and chopped
¼ teaspoon ground black pepper
½ teaspoon salt
3 tablespoons sugar
3 tablespoons nam pla
1 tablespoon cornstarch mixed with 100 grams / ½ cup water


Green onions, sliced

In a small bowl combine finely chopped shallots, minced garlic, Chinese parsley, chillies, black pepper, and salt.
Set aside.
Using 2 tablespoons of oil from frying the fish, add all the combined ingredients in a skillet.
Stir-fry over medium heat for 2 minutes.
Add sugar, nam pla, and cornstarch mixed with water.
Pour sauce over the fish.
Garnish with green onions.
